BACKGROUND

The 2017 vintage is made using 100% Pinot noir grapes grown at the Bellarmine vineyard.

THE WINEMAKING

Harvested in the cool of the night at optimum flavour levels as determined by the winemaker. The wine is made by the traditional saignée ("sohn-yay") method of bleeding the juice from the skins after only a few hours of skin contact. Fermented at cool temperatures in stainless steel, oak is avoided and the natural characters of the varieties are optimised. Sudden chilling of the tank occurs when the wine has only about 8g/L of sugar left to convert into alcohol. This stops the yeast cells and results in the wine being off-dry and very appealing as it enhances the natural fruit characters. Made like a sparkling base wine, this wine sees no second fermentation in bottle.
