|Harvested in the cool of the night at optimum flavour levels as determined by the winemaker. The Pinot Noir fruit is crushed and destemmed with only the free run juice portion being used for the Bellarmino. The Chardonnay and Sauvignon Blanc portions are taken from the respective juice tanks when that fruit comes in. Fermented at cool temperatures in stainless steel, oak is avoided and the natural characters of the varieties are optimised. Sudden chilling of the tank occurs when the wine has only about 12g/L of sugar left to convert into alcohol. This stops the yeast cells and results in the wine being off-dry and very appealing as it enhances the natural fruit characters. Made like a sparkling base wine, this wine sees no second fermentation in bottle.
